High-Protein Dinner Bowl Recipe
Ingredients:
- Cooking oil (Courtney uses avocado oil spray for everything)
- 1 lb ground beef (93% grass-fed beef)
- 2 small onions, diced
- 1/2 large sweet potato, cubed
- 1 cup broccoli, chopped
- 1 container Noble Made Sloppy Joseph Sauce
- Scallions and coleslaw mix, for topping
- Seasonings: sea salt, black pepper, onion powder, garlic powder
Instructions:
- Prepare all ingredients: dice the onion and scallions, and cube the sweet potato.
- Add the sweet potato to the air fryer or oven at 400°F for 17 minutes.
- Add the diced onion to a skillet with ½ tbsp oil/spray over medium heat. After about 3 minutes, add the ground beef.
- In another skillet, add the chopped broccoli with oil/spray over medium heat. Cook until fork-tender, adding sea salt and pepper, then cover.
- Once the beef is cooked through, add the container of Sloppy Joe Sauce.
- Assemble the plate with sweet potato, broccoli, and 5 oz of beef. Top with scallions and coleslaw mix.
